chamchi kimbap chuseayo! 참치 김밥 주세요!

 "참치 김밥 주세요!" is what I said just about everyday for lunch in Ulsan, and today I made some - kind of (^_^)

"kim-bap" in Korean: 김밥 is this inside-out Korean sushi-like dish which comes from combining the words "kim" 김 (the dried seaweed paper) and "bap" 밥 (rice).  There are many different types of kimbap (even not-so-good ones like "cheese kimbap") but "chamchi" 참치 (tuna) is my favorite.


My kimbap 김밥 lacked some of the regular ingredients, but it did the trick!

new at knitting

I took a trip to Denver to see my wonderful family there and I learned "how" to knit!  Pictures of finished products to come soon-ish!

Kimchi Jjigae 김치 찌개 (traditional and with fish)

My absolute favorite Korean meal.  You need to like spicy and sour combinations to enjoy this amazing soup.  Must be served with a high quality short-grain Korean or Japanese rice to get the full effect (*remember - no chopsticks in the rice!) Traditionally, beef and tofu make up the protein in this stew, but I once substituted for fish and tofu and it turned out just as good!

Kimchi Jjigae: (throw it all in the pot, tofu and/or fish last!)
8oz beef (any cut will do) or fish if vegetarian
1/2 large onion thinnly cut into strips
2 tsp minced garlic
2 cups kimchi
3/4 cup kimchi juice
3 1/2 cups beef stock (or if vegetarian a combo of water and soy sauce will do the trick)
8oz firm tofu
2-4 tsp ground red pepper
1-2 TBSP soy sauce (no need if making the fish version)
1-2 tsp sugar
1 leek sliced diagonally
2 spring onions, sectioned (for garnish)
(optional: one red or green chili sliced to garnish)



Bulgogi 불고기

Easy and tasty dinner!  Korean bulgogi 불고기 beef sauteed with onion, garlic, and green pepper wrapped up in lettuce with a choice of kimchi 김치, pickled daikon 깍두기, and of course - fermented red pepper paste called gochujang 고추장.  I served it with some left-over french onion soup (Bob-o's recipie) because it's not a Korean meal until there is soup and rice.  (The french onion soup was an unexpected nice compliment to the sweet and salty bulgogi). 

Any nice fatty cut of beef will do - - -  about 1 1/2 lbs worth

Marinade for 2+ hours
2 TBSP minced garlic
5 TBSP soy sauce
2 TBSP brown sugar
2 TBSP corn syrup or sugar syrup
1/2 tsp ground black pepper
2 TBSP rice wine or sake
1 TBSP sesame oil
3 1/2 cups thinly sliced pear 
1/2 cup beef stock

The brick-stitch is very time consuming but looks great in multi-strand pieces.  I used a color combination of oil and pewter square beads, red-rocks 11s, rainforest greens, navy glass, amber glass, and french blue 8s.

...because it was both snowing and raining outside when I made this.  Another spiral rope stitch one -  it's such an easy and versatile pattern.  Experimenting with different sizes and shapes of beads gives you a completely different result every time.

Using reds, pinks, and purples together were way out of my comfort zone, but I like the way the colors turned out together.  I added deep yellow beads to hold the clasp in place.

This spiral tubular necklace is also made with hand-made seed beads of various sizes (approximately 11s for the smaller ones and 8s for the larger ones).  The 11s are various colors in the blue, green, and gold shades.  The 8s are black pearl and a glassy greenish blue.

I love this color combination - I had some great pewter square beads and large glass accent beads to add to this one.

I enjoy using rock beads and other "organic-looking" materials.  This spiral rope stitch was one of the first beading patterns I learned.  Once you get the hang of it, you can easily complete a shorter necklace during a movie.

This took forever, but well worth the wait.  I used nonuniform hand-made seed beads ranging from size 10 to 13.

Using nonuniform beads in a tubular style gives a bit of texture to the piece.  Here, I used light pink and crystal size 11 seed beads and size 8 black pearl seed beads.

This is one of the first tubular necklaces that I made.  I added a large accent bead for a centerpiece.  The clasp sits at the base of the pendant.
